Texas Cranberry Bread


A Holiday Staple


If you don't recall your favorite cranberry bread recipe you just stumbled into some holiday luck!

Our longtime friend Marcia sent us this recipe and halfway through making it we knew it was a keeper. Easy to make and packed with the unmistakable taste of Texas pecans. Gift it to yourself or someone near and dear!

Time To Prepare: About 75 minutes (all in)

Foodie Tips:

  • Optional ingredients that we enjoyed: orange jammy bits (to literally pump up the jam) and sliced pistachios. Add them if you have them!

  • On my next go of this bread, I'm sprinkling some coarse sparkling sugar on top.

  • This bread tastes great toasted and with a schmear of unsalted butter!

Ingredients:

2 Cups | Flour 1 Cup | Sugar 1 ½ Teaspoons | Baking Power ½ Teaspoon | Baking Soda 1 Teaspoon | Kosher Salt 2 Tablespoons | Vegetable Oil Or Olive Oil

To Fill (Per Below) | Orange Juice 1 | Egg (Pasture Raised Recommended), Beaten ½ Cup | Texas Pecans, Chopped 2 Cups | Fresh n' Washed Whole Cranberries Heaping Handful or Two | Orange Jammy Bits (Optional) Heaping Handful | Pistachios, Chopped

What To Do:

1. Preheat your oven to 350°F. 2. In a medium or large bowl mix the five dry ingredients all together. 3. In a measuring cup add the oil and then the orange juice to yield ¾ cup. Pour this on top of the dry mixture. 4. Slightly beat the egg and add it to the dough. Whisk by hand or with a hand mixer. 5. Fold in the pecans and cranberries (and jammy bits and pistachios, if using).

6. Spoon the dough into a greased loaf pan. Shape the dough slightly higher around the edges than the center. I did this by pressing my spatula into the center of the dough.

7. Bake at 350°F for 50-60 minutes until the center of the bread is done.


Yield: One loaf. After tasting this bread you might prefer to make two loaves.
