I joke that these crostini are so easy to make they don't really warrant a recipe. But for those new to making olive crostini at home, one "go" at this recipe and you'll probably be making more by memory, like a culinary pro.

Crostini, which translates to "little toasts" in Italian, are perfect for impromptu gatherings or any time you want to serve something extra special at your table. Nicknamed "Jeanie's Crostini" in honor of a special family friend, these olive crostini pair well with pasta dishes, fresh salads, caprese, and make a great "plus-up" for your charcuterie and cheese boards.

Time To Prepare:

About 5-10 minutes to prepare, plus about 10 minutes for baking. Recipe Tips:

  • You can use your favorite olive salad. My family's favorite is Boscoli olive salad, which we found at Randalls Cedar Park. Boscoli olive salad is a mixture of green and black olives, capers, giardiniera (pickled vegetables), a blend of herbs and spices, all mingling in a blend of canola and Extra Virgin Olive Oil. Boscoli olive salad is also available in Kalamata Olive and jalapeño varieties.

  • You can use your favorite bread for this. We prefer using a baguette, which is the perfect sliced size for crostini, and typically available at most grocery store bakeries.

An easy crostini recipe

Olive Crostini Ingredients: 1  |  Baguette, Sliced Into ¼"-½" Thick Slices To Top  |  Boscoli's Italian Olive Salad

1 Cup  |  Parmigiano-Reggiano, Freshly Grated


How To Make Olive Crostini 1. Preheat oven to 350°F. 2. Slice your baguette into ¼"-½" thick slices. 3. Optional Step: If you'd like your crostini extra-crispy, you can toast them a few minutes before you add the toppings.


4. Add a spoonful or two of the olive salad to the top of each slice of bread. Make sure to include some Boscoli olive oil juice, which brings flavor while helping the toasts reach a golden brown. 5. Top with the grated Parmigiano-Reggiano.


6. Bake at 350°F for 10-15 minutes, or until just crisped to perfection.

These are best enjoyed fresh from the oven. They also refrigerate well and can be served at room temperature or quickly reheated.
