Sausage Spinach & Egg Breakfast Casserole

Making a fresh and delicious breakfast doesn't have to be complicated and this is one of the easiest recipes to prepare to start your day in the best of ways.


A culinary cousin to our Mini Savory Breakfast Casseroles, this breakfast casserole features your favorite breakfast sausage (sorry, bacon) and the preparation makes for a perfect presentation for families or brunch gatherings.

About 45 minutes (all in)

Foodie Tips:

  • Instead of fresh spinach, 10 oz of frozen spinach will work.

  • If you use more cheese, we won't tell. 🤠


Ingredients:


½ Pound  |  Breakfast Sausage

6  |  Pasture-Raised Eggs

Cup  |  Milk To Taste  |  Salt And Pepper

6-7 Handfuls  |  Fresh Spinach

11-12  |  Cherry or Grape Tomatoes. Cut Into Quarters

1 Cup  |  Mexican Style Cheese, Shredded ½ Teaspoon  |  Dried Oregano



What To Do: 1. Preheat your oven to 350°F. Spritz a 1.5-quart baking dish with cooking spray.


2. Heat a large skillet over medium-high heat. 


3. Cook and break up the sausage until browned. Drain any excess grease.


4. To the sausage, add as much fresh spinach as the pan will hold, stir to wilt, then add the rest. Briefly placing a lid on the pan will help facilitate the wilting.


5. Let the sausage and spinach cool a bit so you don't scramble the eggs when adding them in.


6. Beat together the eggs, milk, salt, and pepper in a medium bowl.


7. Stir in the cooled sausage mixture, cheese and oregano.

8. Bake for about 30 minutes until an inserted knife comes out clean. Serve and enjoy! Yield: 6-8 Servings
