A Home Style Austin Favorite Difficulty: ★★★★★ Required Patience: ★★★★

This meatloaf became our favorite from the very first taste. It features a remarkable mushroom, bacon, and cheese flavor-filled mash-up that will have you swooning. I've adapted this recipe to be carbohydrate-friendly, so the only guilt you'll have enjoying this simple "keatloaf" pleasure is that you may not want to share it with others. It's that good!

  • Umami Seasoning? Yes - this stuff is great! Umami is the fifth basic taste, alongside sweet, sour, salty, and bitter. It's often described as a savory, meaty, or brothy flavor that deepens the overall taste of food. The term "umami" comes from the Japanese words "umai" (delicious) and "mi" (taste). This stuff raises the flavor-filled taste of this meatloaf.


  • For the mushrooms, baby bellas or white mushrooms work well.

  • Great sidekicks include mashed potatoes and a spinach salad with your favorite add-ins.

Ingredients:


For the meatloaf: ½ Cup  |  Onion, Finely Chopped 1 Cup  |  Fresh Mushrooms, Finely Chopped

1 Pound  |  Ground Beef ½ Pound  |  Ground Pork

½ Cup  |  Pork Panko Fried Pork Rinds

2  |  Large Eggs

¼ Cup  |  Heavy Cream

¼ Cup  |  Water

½ Cup  |  Parmesan Cheese, Grated 7 Slices  |  Bacon, Cooked and Crumbled

1 Tablespoon  |  Worchestershire Sauce

1 Tablespoon  |  Heinz No Sugar Added Ketchup 1 Teaspoon  |  Umami Seasoning

1 Teaspoon  |  Garlic Powder

1 Teaspoon  |  Dried Thyme

½ Teaspoon Each (To Taste)  |  Kosher Salt And Pepper ½ Cup  |  More Sliced Mushrooms

2-3 Slices  |  Smoked Provolone


For the topping:

½ Cup  |  More Heinz No Sugar Added Ketchup

1 Cup  |  Swiss Cheese, Shredded

½ - 1 Cup  |  More Mushrooms, Sliced

2 Slices  |  Bacon, Broken Into Half-Inch Pieces


What To Do: 1. Prep the onion, one cup chopped mushrooms, and Swiss cheese and add to a large bowl. 2. Preheat your oven to 350°F. 3. Add everything else on the meatloaf ingredient list above to the large bowl, except the half cup of sliced mushrooms, sliced smoked provolone and the meatloaf toppings. Thoroughly combine. 4. Spray a loaf pan lightly with non-stick cooking spray and place half of the meat mixture in the pan. Press to flatten. Add the sliced provolone, one-half cup of the sliced mushrooms, and top with the remaining half of the meatloaf mixture and press the top flat again. 5. Cover the top of the loaf with the remaining half cup of ketchup, sprinkle with the shredded Swiss cheese, and top with the remaining sliced mushrooms and bacon pieces. 6. Bake 50-60 minutes until the internal temperature reaches 160°F. 7. Remove the meatloaf from the oven and let it rest for about 10 minutes before serving. Yield: 8-10 Servings.
